Keto Cake Frosting
Smooth Keto Buttercream Cake Frosting
350g of butter, softened
1 Tablespoon fresh lemon juice
1 Tablespoon vanilla extract
1 package of Keto and Co Frosting Mix
5 Tablespoons water
Leave butter out to soften
Combine 5 Tablespoons of water and frosting mix in a medium sauce pan. Whisk together until combined.
Cook on low heat until mixture is bubbly and is smooth and all grainy bits are dissolved. Add lemon juice and stir.
Cover and let cool to room temperature, but do not let sit overnight or it will get too hard.
Using a hand mixer, whip butter until fluffy. Add vanilla and mix to combine.
Add cooled frosting mixture into butter and whip until fluffy.
** Note if the mixture melts the butter, just put in fridge and let it harden. Then whisk again with hand mixer until fluffy.
** If mixture becomes grainy, you can reheat the mixture in the microwave until dissolved, then stir well. Cool in fridge for a few hours and then use hand mixture to whip the frosting again until it reaches desired texture.
