2 large oranges
50 g almond flour
100 g ground almonds
200 g sugar substitute
6 eggs
1 teaspoon baking powder
Cover the oranges in boiling water and simmer for one hour until soft. Cool, then use a stick blender or food processor to make a puree.
Whisk the eggs and fold the remaining ingredients in. Pour into a lined round cake tin (24 cm in diameter) and bake for approximately 45 minutes, or until a cake tester comes out clean.
Cool the orange cake in the tin for 30 minutes, then transfer to a baking rack.
Cut into 12 slices and share.
