1 kg of raw chicken wings
1 cup of pork skins, crushed like breadcrumbs
1 Tablespoon Cajun Seasoning
2 eggs, cracked and beaten
1/2 cup of sugar free chili sauce (optional)
Crush pork skins into small bits like the texture of bread crumbs. A Ziploc style bag works well for this.
Pat the chicken wings dry with paper kitchen towels.
Place egg in 1 bowl. Add Cajun Spice (or spice blend of your choice) to pork skin crumbles, stir or shake well.
One at a time, coat the chicken wings in the egg mixture, then dredge through the pork flour coating. Place on a baking sheet. Repeat until all wings are coated.
Preheat air fryer to 180 C. Cook for 20 minutes. Serve hot with side of chili sauce or dip of your choice.
