1/2 green zucchini sliced thinly
125g of grated parmesean cheese
1 teaspoon garlic powder
1 Tablespoon dried rosemary
1 teaspoon red pepper flakes
1/2 cup of low sugar tomato pasta sauce (for dipping)
Slice zucchini into thin disks. Salt and pepper both sides and place on baking sheet lined with paper towels. Let sit for 45 minutes or best overnight in fridge.
Remove zucchini and dry baking sheet. Preheat oven to 200 C
Line baking sheet with baking paper.
Place a pinch of cheese on the baking sheet, top with zucchini round. Repeat until tray is full.
Sprinkle zucchini with spices.
Top each zucchini round with another pinch of cheese.
Bake in 200C oven for 15 minutes.
Change rack to top shelf and turn oven on broiler. Broil for 2 minutes.
Remove from oven and let cool until cheese is firm.
With kitchen shears, cut into squares and serve with tomato sauce like Vesper Brother's pasta sauce.
