500 g of raw, peeled prawns
1/2 bell pepper, sliced
1/4 raw onion sliced
1 Tablespoon of oil
.25 can of chipotle peppers in adobo sauce
Salt and pepper
Slice pepper and onions into strips
Chop adobo peppers into a fine mince.
Thaw and drain prawns, pat dry with paper towel
Heat 1 Tablespoon of oil in a large skillet.
Add onions and peppers, season with salt and pepper, and sauté until soft and a bit caramelized.
Add prawns to pan and season with salt and pepper. Cook until the color turns pink but do not overcook.
Add adobo peppers and stir, cook until hot, about 1 minute.
Serve with cauliflower rice, sour cream, and sliced green onions, or cilantro.
