800 g boneless skinless chicken legs or thighs
4 Tablespoons coconut oil
30g fresh ginger
20g fresh galangal or extra ginger
2 cloves of garlic
4 Tablespoons Chinese 5 Spice mix
4 springs of curry leaves
2 teaspoons of sea salt or kosher salt
2 Tablespoons coconut milk
1 teaspoon Sukrin brown sugar substitute
Puree all marinade ingredients in a food processor until it makes a thick paste.
Add chicken and coat with marinade. Cover and let sit for at least 1 hour or overnight in the fridge.
Heat a frying pan or wok on low heat and add the oil. Fry chicken 6 minutes on each side or until reaches 75 degrees C with. meat thermometer. Serve immediately with your favorite low carb side dish.
