Hassleback Keto Chicken Parmesean
2 chicken breasts
1/8 raw onion sliced
1/2 cup bell peppers sliced
1/2 cup raw mushrooms sliced
1/2 cup Vesper Brother's marinara sauce
1/2 cup grated mozzarella cheese
1 teaspoon dried rosemary
1 Tablespoon butter
Preheat oven to 200C
Stir fry vegetables in 1 Tablespoon of butter on medium heat for 10 minutes until soft and caramelized.
Grease a small oven proof dish with butter or oil.
Pat chicken dry with paper towels. Salt and pepper both sides.
Score chicken with 6 slits agross the top of the chicken breast, making horizonta cuts about 2/3 way through.
Stuff slits with cooked vegetables.
Top chicken with pasta sauce, sprinkle with rosemary. Top the chicken with cheese.
Bake for 20-25 minutes or until chicken reaches 74 degrees on a meat thrermometer.
Remove from oven and serve hot.
