1/2 cup walnuts (crushed to small pieces)
1/4 cup almond flour
2 Tablespoons butter, melted
1 Tablespoons Sukrin sugar substitute
1 box strawberry sugar free Jell-o
3/4 cup cream cheese
1 1/2 cups whipping cream
1 cup of strawberries cut in 1/4 or half
1/2 cup boiling water
Blitz walnuts in food processor until crushed into small pieces. Combine with almond flour, butter and Sukrin sugar substitute.
Press into a springform pan, greased and lined with baking paper.
Combine 1/4 cup of cream cheese and all whipping cream. Beat with hand mixer until fluffy and forms into stiff peaks.
Boil 1/2 cup of water. Combine water and Jell-O into a mixing bowl. Using a hand mixer or blender, combine 1/2 cup cream cheese until blended.
Fold Jell-O mixture into cream mixture and stir together until combined.
Pour topping onto crust. Decorate with strawberries. Store in fridge for 2+ hours or overnight.
