Juicy Grilled Chicken Skewers
Juicy Keto Chicken Skewers
1 kg of boneless chicken legs, skin removed
1 packet of Good Seasons Italian salad dressing mix
1/4 cup of vinegar of your choice
1/2 cup of oil of your choice (we used olive oil)
3 Tablespoons water
Wooden skewers soaked overnight in water bath
Prepare Good Seasons Salad dressing as directed on box. Combine dry mix, oil, water and vinegar. Shake well and set aside and leave at room temperate.
Soak 4 wooden skewers overnight in water.
Remove chicken skin (save for later project)
Cut chicken into 1 inch cubes.
Place chicken in 1 gallon freezer bag.
Shake dressing mix well. Add 1/2 of the dressing to the chicken bag. Zip closed. And place in fridge overnight.
Preheat grill to low around 250-300 degrees.
Remove skewers from water. Thread chicken onto 4 skewers.
Place chicken on grill and cook, tuning often until temperature reaches 75 C (170 F) with instant read thermometer. This may take 20-40 minutes. Keep heat low or the chicken and skewers will burn.
Remove from heat and let rest 2-5 minutes. Serve hot.
To make this less caloric, cut back on the oil and/or use chicken breasts.
