1 kg boneless chicken thighs
1 bottle Ken's Creamy Caesar salad dressing
1 block of cream cheese
2 shallots, minced or very small onions
salt and pepper
Mince onions and set aside.
Remove skin from chicken and set aside for later project.
Cut chicken into 1 inch cubes. Lightly salt but heavily pepper both sides of chicken.
In a slow cooker, place onion on bottom. Add chicken, top with entire bottle salad dressing and place unwrapped cream cheese on top.
Set slow cooker to low, cover and cook for 4 hours.
Stir well until sauce is smooth.
Serve on noodles, low carb bread or whatever you like. It is soft and creamy so you might like to combine with something with a crunchy texture.
If you want to cut calories and fat, change chicken to chicken breasts, reduce salad dressing by 1/2. It makes a lot so 8 portions would be generous.
