2 eggs
1 tablespoon of butter, separated into 2 equal parts
20 g of cheese
Get 2 separate pans and 2 spatulas ready. An 8 inch omelette pan works best.
Crack 2 eggs in a small bowl and beat with a fork until well mixed
On low heat, melt 1 tablespoon of butter in each pan.
Pour eggs into one pan and let sit for 20 seconds.
Add cheese to the other pan, and stir quickly with your spatula until melted. Remove from heat.
Change your attention to egg pan and slowly scrape and turn eggs every 15-20 seconds. Do not constantly mix or they break into bits.
When eggs are soft and still a bit runny, remove from heat. Scrape melted cheese into egg pan and fold together.
Serve immediately.
Processed American cheese works best (like Kraft Singles), but you can try this with any natural cheese as well. Cooking the cheese separately makes these eggs turn out smoother and more creamy than if you cooked in the same pan. Trust me as I have tried both ways, and this is better. More dishes but my kids ask for these eggs all the time.
Serve with a side of Cauliflower Griddle Grits for a hearty and tasty breakfast.
