170 g mozzarella cheese, grated
2 Tablespoons cream cheese
1 egg
1 pinch of salt
85 g almond flour
1/4 cup sugar free BBQ Sauce
1/4 onion, diced
2 teaspoons butter
1/2 cup cooked chicken, chopped
2 slices of bacon, cooked and chopped
2 Tablespoons spring onion, minched
150 g mozzarella cheese, grated
Preheat Oven to 200C
Crack and beat egg and set aside.
Microwave 170g grated cheese, salt and cream cheese together for 1 minute, stirring every 30 seconds until the mixture is well mixed and melted. Add almond flour and stir to combine. With a metal fork, add egg and whip mixture by hand until it forms a ball.
Tear off 2 sheets of parchment (baking) paper that will fit a pizza pan. Place dough on top of the paper. Then, place 2nd sheet of parchment paper on top of dough. Using a rolling pin, roll the dough flat and shape into the shape of your pizza pan. Carefully remove top layer of parchment paper.Move pizza dough to pizza pan, keeping the dough on the paper and moving them together. Shape dough with fingers to match size of pan.
Cook in oven for 5 minutes. Remove and flip dough upside down. Return to oven for 5 minutes. Remove dough from oven and flip again.
Add BBQ sauce to top of pizza base, then sprinkle cheese, and next sprinkle the toppings -- onion, chicken, and bacon but (reserve the spring onions). Cook for 10 minutes or until cheese is melted and golden brown. Let cool for 5 minutes and cut into 8 slices. Garnish with spring onions.
To cut calories in this recipe, divide dough into 1/2 and roll out a thin crust pizza. You can consider using less cheese for the toppings.Other variations are Buffalo Chicken Pizza made with hot wing sauce, or traditional tomato sauce pizza made with a low carb sauce like Rao's.
