12 chicken drumsticks (skinless)
2 teaspoons ghee
salt and pepper
2 cups sugar free BBQ sauce
Skin drumsticks. Pat dry with kitchen (paper) towels. Salt and pepper both sides of chicken.
Over medium heat, melt 1 tsp oil. Place 6 drumsticks into a large skillet and brown on all sides.
Remove drumsticks to plate. Brown remaining 6 drumsticks with 1 tsp oil. Over medium heat, melt 1 tsp oil. Place 6 drumsticks into a large skillet and brown on all sides.
Return all drumsticks to the frying pan. Pour in 2 cups BBQ sauce. Turn chicken with tongs to coat.
Cover with tight fitting lid. Turn heat to low. Cook for 10-15 minutes or until chicken reads 72 C on meat thermometer.
Transfer to serving dish and enjoy.
Use 500 g of any skinless chicken. Reserve your chicken skin to make fried chicken skin snacks at a later time. I usually keep in the freezer and cook in batches later.
Use less BBQ sauce if you want to cut your carbs down or eat only 1 drumstick.
