1 box Sukrin baking mix
1 lemon, zest and juice separated
4 eggs
100 mL of butter, melted
150 mL of water
3 Tablespoons of granulated sugar substitute.
5-10 drops liquid sucralose sugar substitute
Grease the bowl of a rice maker with butter on all sides and bottom.
Mix together baking mix, melted butter, eggs, and water by hand with a whisk until well mixed.
Fold in the lemon zest and stir to combine.
Pour mix into rice maker bowl. Close lid and choose the "cake" mode and walk away.
Combine juice of 1 lemon, 3 Tablespoons of granulated sugar substitute. Taste and continue adding sweetener or liquid sweetener to taste.
When cake if finished, and rice maker beeps, remove by inverting onto a plate. Repeat to invert again so top is upright. Glaze with lemon juice mixture. Serve warm or room temperature to enjoy.
