4 green bell peppers (capsicum)
1/2 red onion
2 Tablespoons chopped English parsley (optional)
1 teaspoon dry oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 Tablespoon red wine vinegar
Wash the peppers and slice into thin strips. Cut onion into thin strips.
In a large frying pan, heat olive oil on medium heat, cook the red onion until softened, about 5 minutes.
Add peppers to the pan and continue to cook, stirring often for about 5 minutes. Add parsley, oregano, salt and pepper and cook another 5 minutes.
Add vinegar and cook for another 3-5 minutes or until peppers are carmalized in some areas.
Transfer to a sering platter and serve hot.
