Sweet & Sour Cucumber Salad
Sugar Free Sweet & Sour Cucumber Salad
2 Japanese style cucumbers (small and long)
1 teaspoon salt
1/2 red onion thinly sliced
1 cup vinegar (white or apple cider)
1/2 cup water
1/2 cup of Sukrin sugar substitute
2 Tablespoons fresh dill minced (alternatively use 2 teaspoons dried dill)
Thinkly slice cucumbers. Season cucumbers with salt and let cry fo 1 hour. Drain off liquid and combine with onion slices.
In a small saucepan, on high heat; combine vinegar, water and sugar substitute until dissolved 3-5 minutes.
Pour over cucumber and onions. Add dill and stir. Cover and store in fridge for 1 hour. Serve cold.
