250 g skinless boneless chicken thighs
2 cloves garlic, minced
1 tablespoon ginger, minced
50 mL water
100 mL soy sauce (or liquid aminos)
100 g of artificial sweetener
1 Tablespoon oyster sauce
50 g of snow peas (mangetout)
1 Tablespoon of coconut or olive oil
Boil soya sauce and sweetener together until dissolved. Set aside. Let cool to room temperature.
Mix garlic, ginger, water, oyster sauce and soya sauce mixture together in a bowl.
Cut chicken into strips. Combine chicken and marinade and let rest in fridge for 30+ minutes.
Heat a frying pan onto medium high heat. Add oil.
Cook chicken 3-4 minutes, lightly tossing until it is cooked through. Add the snow peas and any marinade and cook for 2 minutes or until vegetables are softened.
Turn off heat and transfer to a serving platter. Serve with cauliflower rice.
If you prefer chicken breasts you can use that instead. This works best with boneless, skinless chicken.
