6 hardboiled eggs, chilled and peeled
4 Tablespoons mayonnaise
1 teaspoon finely chopped onion
1 stalk celery finely chopped
1/4 teaspoon zero sugar mustard
salt and pepper to taste
Boil eggs, cool and peel. Smash with a fork until coarsely chopped.
Combine all ingredients and store in fridge until flavors meld. Garnish with sweet paprika.
Serve on a bed of lettuce or with lettuce wraps or however you like it.
