500 g of white fish like saba or tilapia
1 Tablespoons coconut oil
2 cloves of garlic, thinly sliced
10 string beans, finely sliced
1/2 cucumber peeled and seeded
1 cup freshly grated coconut
1 stalk lemongrass, tender inner part
6 basil leaves, fresh
6 mint leaves, fresh
6 laksa leaves, fresh
1/4 cup spring onions minced
5 cups prepared cauliflower rice
Clean fish and pat dry. Grill under hot broiler for 10 miutes, turning once. Let cool then skin and debone.
Heat oil in wok and stir fry garlic until light brown. Dry on paper towels.
Reduce heat to low. Fry coconut for 6 minutes until golden brown.
Slice beans thinly and dice cucumbers. Slice lemongrass very thin with sharp knife. Cut herbs into very thin strips.
Toss all ingredients together with cauli rice until well mixed. Serve immediately with sambal sauce (optional)
