160g almond flour
320g of mozzarella cheese, grated
4 Tablespoons of cream cheese
2 eggs, cracked and beaten
1 cup of party nuts, chopped into small pieces
4 Tablespoons of Golden syrup substitute
1/4 cup of brown sugar substitute
2 tablespoons of cinnamon
6 slices of bacon, cooked crispy and cut into small bits with scissors.
1/2 cup butter, softened
1/2 cup cream cheese sofened
1/4 cup sugar substitute
1 teaspoon vanilla extract
Prepare party nuts. Let cook and measure out 1 cup and chop into small bits. Food processor is a great tool for this.
Preheat oven to 200C
Prepare bacon, cool and cut into small pieces.
Microwave almond flour, cream cheese and mozzarella on high in microwave for 3 minutes. Stirring half way through.
Mix well with a fork until combined. Add 2 eggs beaten and whip together using a fork.
Line counter with baking paper. Shape dough into a ball. Place more baking paper on top. Using a rolling pin, roll flat. Remove the top layer of baking paper.
Sprinkle brown sugar over the top of the dough and then add the cinnamon. Drizzle with Golden syrup. Cover half dough with bacon and the other half with the chopped nuts. Grease and line a cake pan with baking paper on bottom and sides.
Slice dough into 2 inch strips and roll carefully. Place into cake pan carefully. (If you prefer can use muffin tins)
Repeat until all dough is rolled and placed into baking pan.
Cook rolls for 15 minutes at 200C or until golden brown.
Combine 1/2 cup butter, 1/2 cup cream cheese and 1/4 sugar substitute and vanilla in a bowl with hand mixer. Whip until combined. Reserve.
Remove rolls from oven. Top with icing. Serve hot and enjoy.
