500g of raw pecans (or substitute raw walnuts or almonds)
2/3 cup of sugar substitute
1 egg
2 teaspoons ground cinnamon
1 teaspoon ground corinader
1 teaspoon nutmeg
1 teaspoon salt
Preheat oven to 130 C
Separate egg into white and yolks.
Whisk egg whites and salt together
Combine nuts and egg white mixture and let marinate for 5 minutes.
Drain nuts in colander and let sit for 5 minutes.
Combine sugar substitute and spices.
Mix nuts, sugar substitute and spices together.
Line a baking pan with baking paper. Spread nuts out into an even layer.
Cook nuts for 15 minutes. Remove from oven and turn with spatula. Spread back into even layer. Finish cooking for 15 minutes.
Remove from oven and let cool.
Using your hands gently separate and store in a covered jar.
