1 chicken breast, cut into 1 inch cubes
6 Tablespoons plus 1 t of sugar free honey mustard sauce
3 tablespoons plus 1 teaspoon sugar free mayonnaise
50g Parmesean cheese sliced
1 egg, hard boiled.
1/4 red pepper sliced into cubes
2 Tablespoon red onion slices
1 spear of bread and butter pickles, sugar free
2 cups of lettuce
Marinate chicken in 3 tablespoons of honey mustard sauce overnight in Ziploc bag.
Hard boil an egg, chill and peel. Cut in 1/2 and scoop out yolk. Mask yolk with a fork, mix together yolk and 1 teaspoon mayonnaise and 1 teaspoon honey mustard. Spoon back into egg. Reserve.
Thread chicken onto skewers. Cook in air fryer at 180C for 15 minutes. Turning often until they are brown and temperature reaches 75C. Let cook 3 minutes.
Make a sauce with 3 tablespoons honey mustard and 3 tablespoons mayonnaide. Mix together until creamy. Use as the salad dressing.
